Tip #1. This salad can be made a day in advance but leave the oranges and cheese just before serving. If you don’t do that then the cheese could get dry or absorb other flavors, and the orange will release juices making the salad watery
Tip #2 : With this salad, use less starchy potatoes. This gives the salad more texture
Tip #3 : Don’t cook the potatoes and carrots in the same pot. Carrots need more cooking time. If you cook them in the same pot the potatoes will be overcooked
Tip #4 : You can used frozen peas in this recipe. A drained can of peas would be OK as well
