Tip #1 : Roasted Chickpeas : If you want your chickpeas as crispy as possible, try to get them as dry as you can be draining and rinsing. You want to each a chickpea salad as fast as you can because roasted chickpeas will lose their crispiness over time. Roasted chickpeas can be reheated in the oven for about 10 minutes to get them crispy again
Tip #2 : Cut everything the same size. The best bites of chickpea salad happens when you get a bit of everything. That includes fresh herbs, creamy cheese, sweet dates and juicy vegetables. Cut the cucumbers, dates and tomatoes into a small, diced size so you can scoop them along with the chickpeas
Tip #3 : Save some herbs or cheese as a garnish. If you make the salad ahead of time, save the mint leaves to add at the last minute

Tip #4 Marinate the chickpeas. You don’t need to rush it. Marinating the chickpeas will infuse with the flavor, also also tenderizes the canned chickpeas. If time permits, chill the finished salad for another half hour, this will improve the flavor
