Tip #1 : Make the radish salad ahead of time. Because the ingredients in the salad are so sturdy, it’s a great make ahead salad for lunches or a picnic. Put the mint leaves in right before you eat so that the mint stays green and fresh.

Tip #2 : Keep roasted radishes on the crunchy side. If the radishes are too soft, there will be no contrast with the creamy white beans or hold up to the crisp raw radishes. Roast them for 15 minutes
