3. Add the minced garlic, cumin, paprika, and salt to the pan and continue cooking for another 10 minutes, or until the vegetables are soft and the mixture is thick. 
4. Remove from heat and let the mixture cool. 
5. Once cooled, transfer the mixture to a food processor and pulse until desired consistency is reached. 
6. Serve the matbucha salad in a bowl and garnish with chopped parsley, if desired.
